Good Food

Tuscany is renowned for the tastefulness of its typical cuisine. In Montepulciano you can eat excellent food of peasant origin.

The most typical recipe here is Pici alle Briciole, special for its simple ingredients and for the delicacy needed to cook it.
Pici are the typical pasta of Politians. Ingredients: white flour, water, love for good food and a lot of experience. For the sauce: tuscan oil and stale bread.
It may seem an "ordinary" dish, but when you taste it you feel the "richness" of its ancient origins. You must try it. It goes perfectly with Montepulciano red wine.

Again with flour and water (but with the addition of eggs) we make maccheroni and tagliatini.
With stale bread we make panzanella - a salad dressed with plenty of oil and enriched by spices such as onion and basil - or ribollita - a soup made with sliced bread washed down with bean broth.
With wheat flour, worked and cooked in oil, we make rivoltolo. Ravaggiolo is a sort of soft cheese wrapped by fern leaves. With roasted bread, rubbed with garlic and dressed with young oil, we make bruschetta.

Roasted chicken, nana (duck), ocio (goose), porchetta (pork) cooked with salt, garlic and rosemary, roasted capon, guinea fowl and rabbit are the meats which emigrated from the countryside to the restaurants of the town.
